Guar gum is a water-soluble polymer, whose chemical name is guar gum hydroxypropyltrimethylammonium chloride. It is a highly purified natural polysaccharide extracted from guar bean, a leguminous plant widely planted in the Indian and Pakistani subcontinent.

It uses natural guar gum as raw material, and the remaining endosperm after removing the epidermis and germ mainly contains galactose and mannose. After drying, crushing and pressure hydrolysis, it is precipitated with 20% ethanol solution. After centrifugation and drying, it is prepared by reacting with glycidyl ether trimethylammonium chloride.

Guar gum is a macromolecular natural hydrophilic colloid, which is mainly polymerized from galactose and mannose into food to form hydroxypropyl guar gum. It belongs to natural galactomannan, one of the quality improvers, and a natural thickener
